2 Answers. Better barley roller mills have an adjustable gap because different lautering systems have different requirements, as mentioned by @Denny, but there is no standard. This article says that a mill gap between 0.035 and 0.050 inches (0.89 and 1.3 mm) is thought to be a good, all-purpose setting for barley malt.

If the mill's manufacturer cannot be contacted, then a good rule of thumb is to not exceed 60 to 100 RPM. (That is approximately the maximum speed a human can turn the mill while crushing the grain.) I motorized the JSP Maltmill and after contacting the manufacturer, I decided to try and keep the motor speed below 300 RPM.

This 7lb hopper definitely holds 7lb of barley (picture above is exactly 7lb of 2-row). It also features a rubber gasket around the top sharp edges to help protect you from cuts. This seems to be permanently attached to the unit from the factory. As mentioned, this unit came with both a 7 and 15lb hopper.
